Okanagan cherries, toffee, and clove on the nose. Cedar, earth, and cola on the palate
Grapes were hand-harvested, destemmed, and cold-soaked whole-berry for 8 days. Fermented over 14 days with gentle punch downs to incorporate the cap into the must. The wine was pressed off into the barrels and left to age on lees for 20 months. 100% French oak, 25% new.
