Picked in our 'pants down' style, these grapes were partially allowed to stay on the vines until the weather dipped below freezing. This naturally dropped the high acid levels in the grapes.
Hand harvested, destemmed, and gently crushed. Pressed into stainless steel to ferment over 26 days at low temperatures. Allowed to clarify naturally over the winter months.
