Colour - nice golden straw hue. Nose - butterscotch, vanilla, toasted oak, clove, and citrus zest. Mouth - a melody of citruses, warmed hazelnut. Medium-full mouthfeel with a full body.
Ex Nihilo Estate
picked from our estate vineyards at the Ex Nihilo Winery site. The fruit was left on the vines until the last possible minute in November. Medium yield year
Grapes were picked and pressed immediately. Being that the grapes are only 500 feet away from the press this didn’t take long. After pressing juice was settled, then put into barrel for primary fermentation. Fermentation took about 3 weeks to complete. From there we went MLF in the same barrels. This took about a month. The wine was being stirred daily throughout the 7 weeks, sur lies. After MLF was complete the 24 barrels were blended into tank to get a balanced mix and the back into the same 24 barrel, where they rested for the next 8 months.
